I have been making blueberry wine for years. It always turns out fine. I use the same ingredients and procedure all the time.

For some reason the last two batches the sg has not dropped like all the others. Usually, the sg starts about 1.090 and finishes about .992.


The temperature is good. Can it be the ACID BLEND,PECTIC ENZYME or ENERGIZER. The yeast is fine. Do these three have a shelf life?

I have read that some ingredients, like pectic enzyme and energizer, do have a somewhat limited shelf-life. I seem to recall Jack Keller having something in his blog about self-life of ingredients. After reading his blog, I've started keeping my pectic enzyme and energizer in the refrigerator.

sorbate is also another chem that doesnt have a very long shelf life so dont buy large quantities of this stuff and keep it in the fridge and try and get it from a place that actually moves their product like George. I have a place near me that has had the same little jars of some of these ingredients for ab out 3 years, How do Ai know they are the same ones, because of the layer of dust on them!

I just bought all new ingredients, didn't want to take a chance and try to save the batch so I dumped it.
Should I keep everything in the fridge? Sorbate, energizer, acid blend etc. ?

And especially yeast, I would. I keep them all in a Ziplock bag with a few of those moisture absorbers or some rice.
