Hello everybody,


I am thinking about making a cider (probably Pear). I did a search of the site and saw threads about "hard apple cider", ect. ect.


Does anyone have feedback about how these turn out?


Any good recipes?


Tips or Instructions I should follow?

I did some web searches on cider and I think I read that if it is made from pears it is called pearey or pearie. Not sure of the spelling. I know that in the old days they were made from a blend of apples or pears, to give the right blend of sugar, flavor, acidity and tannins. Let us know if you have a batch that turns out well. I would love to have a tried and true recipe.

I just did a what turned out to be 5 gallon batch of apple.
Cut peeled and steamed/boiled about 20lbs of apples after coring.
Added 3 cans organic apple concentrate and added enough water to bring it to 6 gallons with the mashed fruit in a straining bag. Added pectic enzyme and bentonite and a bit of wine tannin. Brought the SG up to 1.85 with simple syrup.
Haven't had a pear wine yet. Very interesting though.

Goodfella just follow the directions for making a cider and substitute the pears instead. For cider (apples) or perry (pears) you use pure juice with no added sugars, ferment to dry, and bottle either still or leave it alone and bottle in beer bottles. You can clear it or not and enjoy. Because I have no access to fresh pear juice I use baby food pear juice.

Yeah... My Pear wines are already tasting really good. (and they are young).


I was in London last year and had some incredible ciders. So now I want to make one. I have never made beer or any other carbonated beverages. So this may be my first shot.

appleman made a hard lemonade using Windsor Brewing Yeast from Danstar, should work well for your project. I really enjoy perry so much more flavor then ciders, to me anyway, but I am still playing!

It seems pretty easy. I guess I need to get some brewers yeast. That seems like it might be the way to go.
