I don't know if many of you are aware of chocolate covered cherry day on January 3rd. But as a joke 2 years ago I decided to make something to celebrate the day. Yes this did involve more experimenting on my part and on Monday it has finally been bottled after only 2 years of aging.

I plan on letting it age at least another year but the sample glass was outstanding and that was using clover honey. Next time it'll get a better honey and a bit of time aging on some cocoa nibs - because I can never leave well enough alone!

Don't know why I can no longer use the image uploader. It shows the following:

I want to make exactly this, and have access to both sweet and tart cherries.....
Do you have a recipe you can share?
