Default Need Help Quick ??

I have 12 pounds of Blackberries can I just double everything except the yeast to make 2 gallons?

6 lb blackberries
2-1/2 lb granulated sugar
1/2 tsp pectic enzyme
7 pts water
wine yeast and nutrient

I think you'll be fine. I never like to blindly add sugar like that though without an sg measurement.

Default BB Wine

Roger that. What would be a good starting point for a reading?

I want a wine that is full bodied and dry. I am also going to experiement with oaking this as well.

Depending on the alcohol content you're looking for. Blackberry is one of the fruits that can handle a higher abv. I would shoot for 1.085-1.09. Others may tell you different. I prefer a wine not too hot.

I agree with Dan, I won't go any higher than that and Blackberry is awesome with oak.

Yes I did, Sammy, I used hungarian oak. I really like the oak in the blackberry. Another fruit that takes oak well is elderberry
