Today I started a Ginger Wine, 2 gallons. Simple, low cost ingredients, my favorite kind. I am attempting to follow the recipe and directions, but I rarely succeed. I am making notes though, and that should please poor Bert. (I shipped him off to his sister's place yesterday and he won't be back until tomorrow. I love starting wines without him around. He always wants me to do things the right way and explain why I'm doing things the way I am. "Because I want" to is usually the answer!)

I used to keep notes, I could never remember where I put them, so I got a notebook just for wine making, now if I ever find it I'm sure its full of great notes and discoveriesI now live with the fact that no two wines made here will ever be the exactly same, but the truly good ones do get a quick jot down on the computer , as close as I can remember.

JW, just remember to back up those files on a disk so you dont lose those to!

Wade, What's this back up files stuff? How do you push them further back in your computer? I can do it in the file cabinet to make room for more stuff, but on the computer?

Racked the ginger wine today. Good flavor but not much for mouth yet. Time to look at more recipes!

I bottled my ginger wine yesterday. I see that back in the beginning I was keeping notes. Oh well!
I got 17 bottles of varying sizes. It's a beautiful amber color. I'm going to put 2 labels on each bottle. One of a picture of ginger root, the other a picture of Ginger from Gilligan's Island. Depending on your mood, you choose your label!
It needed some sweetening so I just poured the last of the simple syrup into the carboy, stirred it in with some chemicals for a better tomorrow, and bottled. I can't behave like this when Bert is around. He's out looking for another kind of deer, so I'm free to behave as badly as I want! I'm a wine rebel!

You must not listen to Johnny Cash to often! At work we have Johnny Cash Fridays, all Johnny all day, we have around 54 Cd's. After Thanksgiving we can add in the Christmas ones!!
