I just picked 14# of figs and can get lots more so I was wondering if anyone has a good recipe for it since this will be my first trial batch. Any suggestions are welcome as always!!

cowgirl, I have never made a fig but was going to recently but the figs I was going to get just were not there. Here is the recipe I had planned on using.

Allison, try this for fresh figs. I make this every year. I've varied the yeasts several times to check for different outcomes.

4 lbs figs

7 pts water

1-3/4 lbs granulated sugar

3-1/2 tsp acid blend

1 crushed Campden tablet

1 tsp yeast nutrient

1 pkg Montrachet wine yeast
