I plan on bottling my wine this weekend, I wanted to rack the wine into my primary to use the spigot when bottling. Whats the best way to use the auto-siphon in the carboy? Do I just put the siphon all the way to the bottom into the lees or do I hold the siphon just above the lees and try to get as much as possible?

Start it off the bottom or you can kick up some lees. As it gets lower, lower it down. I also set something under 1 side about an inch high to elevate one side. This gives you a pocket of one at the bottom to lower the siphon into without stirring up the lees while getting most of the wine. When you are done you can put the liquid part of whats left in a bottle with the aid of a funnel. Save this in the refrigerator-corked, for later use as it settles out.

When do you put something under one side? couple days before you bottle?
